Olive Oil Cake with Midtown Olive Oil

Hi, friends! As we’ve been staying home, I know a lot of us are spending time cooking and baking. Ever since I learned that there is such a thing as olive oil cake, I have wanted to bake one. Thanks to stay-at-home order, it finally happened, and I was so happy with how the cake turned out! #quarantinebaking

Every olive oil cake recipe calls for high quality extra virgin olive oil so we got ours from Midtown Olive Oil! Bethany at Midtown Olive Oil recommended one of the mild olive oils when I explained I was hoping to bake an olive oil cake; we went with California Cuvee, one of their Ultra Premium EVOOs. Since their balsamic vinegars were amazing, we got their Strawberry Balsamic vinegar to “marinade” the berries to top the olive oil cake too.

For the olive oil cake, we modified the recipe from Bake from Scratch (we left out the almond extract because we didn’t have any). For the berries, we modified the recipe from Food. (we didn’t chill the berries in the fridge since the cake was ready, and we were also ready to eat)! The cake was delicious and moist with a hint of olive oil. We’ll for sure make this again, maybe with some citrus fruits next time?
